GAZPACHO Living in hot climates and on board a ship, I wanted to have an easy recipe to make, to store and to serve. Gazpacho is a refreshing appetizer. Healthy fibers too!
Put all the ingredients in a blender. Turn blender on high until well mixed. The texture should be soupy but not too liquid. Add salt and pepper to taste. Refrigerate for 6 hours. Serve cold. Gazpacho can keep in the refrigerator 3 to 4 days. It is better on the 2nd day, when all the flavors have mixed. It's not very suitable for freezing: the texture gets compromised.
